Storing Greens So They Last Three Days Longer
The wet-cloth method, the box trick, and mistakes that wilt your keerai overnight.
Greens die of two things: moisture loss and moisture excess.
Step one, never wash keerai until you cook it. Step two, remove the rubber band — compressed stems bruise and rot. Step three, wrap the bunch loosely in a lightly damp cotton cloth and store it in an airtight box in the middle shelf of your fridge, not the crisper.
Done right, spinach and mulai keerai stay usable for three to four days instead of one. Herbs like coriander and mint do even better standing upright in a glass with an inch of water and a loose cover.
